Ingredients For Brinjal Pickle (Baingan Achar)

Methods
  • 1. Heat mustard oil in a pan till it smokes. Add brinjal cubes and fry them till they turn golden.
  • 2. Remove from the pan and keep it aside
  • 3. In same pan, add mustard seeds, fenugreek seeds,fennel seeds, coriander seeds, curry leaves, garlic and dry chilly.
  • 4. Saute till it splutters and add fried brinjal cubes.
  • 5. Add salt, sugar, kashmiri red chilli powder and tamarind pulp. Mix well and cook on low flame for 2-3 minutes.
  • 6. Switch off the flame. Add vinegar and mix well. Cool it for 15-20 minutes before serving.
  • 7. It can be used for a week if kept refrigerated.
